Vegan Ice Cream Sandwich with Banana Soft Serve

I made these ice cream sandwiches about two weeks ago and put most of them away in the freezer because the weather was cold. Today is even more humid than yesterday therefore it calls for ice creams sandwiches. Who doesn’t like a cold little indulgence on such days?

While I was searching for a new vegan cookie recipe, I found Katie’s Copycat Chocolate Brownie Vitamuffin recipe. I highly recommend Katie’s recipe, it even incorporates pumpkin puree.
I cut back on a few tablespoons of sugar and I am pretty sure I added a bit too much salt, my first batch came out a tad unpalatable. My cookies were a little plain to taste, but it also was not worth throwing away.  Luckily I always keep chopped frozen bananas in case I need them in smoothies. The amount of bananas use in the recipe made more than enough for 6 ice cream sandwiches. Extras can be frozen in a plastic wrap-lined container.

They are super easy to make. Now I have no excuse to buy frozen treats from grocery stores.

Vegan Ice Cream Sandwich with Banana Soft Serve
Yield: 6 sandwiches

Cookies:
1 batch of Copycat Chocolate Brownie Vitamuffin recipe

Banana Soft Serve:
*about 2  frozen bananas ( around 1 1/2 cup chopped)
1/2 cup fresh  pineapple, chopped
about 1 tbsp water, or as needed
1/4 cup frozen mixed berries

1. Bake the cookies, and let them cool completely. Freezing them is helpful for applying the soft serve.
2. In a food processor or blender, blend banana, pineapple and water until smooth. Add in mixed berries last and blend enough to have some berry chunks left. Place mixture in the freezer for about 20 minutes until it is firm, but not completely frozen.
3. Spread the soft serve on the flat side of a cookie and cover with a second cookie. Press lightly to allow the soft serve to spread.  Use a butter knife to fill in any gaps between the cookies.  Continue with the rest of the cookies.

Some other Soft Serve flavour ideas:
Espresso: add 1 to 2 tsp ground espresso powder + 1/4 cup chocolate chips
Pumpkin Chai: add 1 tbsp pumpkin puree + ground chai tea leaves  + dash of cinnamon
Green tea: add 2 tsp matcha powder
Coconut: add 3 tbsp coconut cream + dessicated coconut shreds

* Note: chop bananas and freeze in a bag before use. Use bananas as the main ingredient for soft serve, anything else can be added for different flavour.
