On May 12th I will be posting something specifically for the Virtual Vegan Potluck! I haven’t decided what I will make, but I’m looking forward to it.
I know it’s already late afternoon, but I want to share breakfast 🙂 Breakfast this morning was pancakes— crunchy banana and walnut pancakes. I found a sweet potato pancake recipe from Cook up a Story some time ago and it was fantastic. I really like how she portioned the flours with the wheat bran. But there was no longer any more sweet potatoes at home so I opted for bananas and they turned out great as well.
First, I measure about a cup of milk and filled up the rest of the space with apple cider vinegar ( about 1 tbsp). Next, mixed together 3/4 cup whole wheat flour, 1/4 cup wheat bran, 1/8 cup oats, 2 tsp baking powder, 2 tsp cinnamon and a pinch of salt. In another bowl, 1 egg, 2 tbsp flaxseed oil, 2 mashed bananas, chopped walnuts and some dark chocolate chips were stirred together. When the milk is coagulated/ chunky, add to the banana mixture. Mix together the dry and wet ingredient and there’s the batter.
Banana Walnut Panacake
Makes 16 pancakes
3/4 cup whole wheat flour
1/4 cup wheat bran
1/8 cups oats
2 tsp baking powder
2 tsp cinnamon
pinch of salt
1 cup of milk
1 tbsp apple cider or white vinegar
2 tbsp flaxseed oil or olive oil
2 medium to large bananas, mashed
3/4 cup chopped walnuts
a handful of dark chocolate chips
1. Measure a little less than 1 cup of milk and add in about 1 tbsp vinegar.
2. Mix together the flour, bran, oats, baking powder, cinnamon and salt. In another bowl, mix together egg, oil, bananas. When the milk is ready, add to the banana mixture.
3. Stir together wet and dry mixtures. Add in walnuts and chocolate chips.
4. Have an oiled pan on medium heat and pour in 1/4 cups of batter for each pancake. When bubbles appear on the top of the pancake, it’s ready to flip.
