A Take on Clif Bars – No Bake

Yup, this is a take on the famous loveable Clif Bars, but ended up as a granola bar/ power type bar. It wasn’t exactly as soft as the Cliff Bars are, but hey they are still delish. If allergies to peanut butter is a problem, any other nut butter works just as good (almond, cashew, soynut), though, peanut butter tastes the best.

 Yield: 12-16 bars
  • 1 1/4 cup rice cereal ( Erwhon Crisp Brown, Rice Krispies, etc)
  • 1 1/4 cup rolled oats or quick cook oats
  • 1/2 cup dried fruit ( raisins, dried cranberries, dried blueberries, etc)
  • 1/4 cup finely chopped nuts
  • 1/2 cup honey
  • 1/3 cup and 2 tbsp peanut butter
  • 1 tsp vanilla extract
  • 3 tsp muscovado sugar / brown
  • 1 1/2 tsp cinnamon (optional)
  • 1/2 tsp nutmeg (optional)
  • 1/2 cup coconut flakes (optional)
  • 1/4 cup chocolate chips (optional)
  1. Mix together cereal, oats, dried fruits, nuts, cinnamon, nutmeg and coconut.
  2. Melt honey in a saucepan over low heat with double boiler, when watery, add in peanut butter and vanilla. Or you can microwave the honey and peanut butter. Next, stir smooth and remove from heat.  Let it cool but not completely.
  3. Add to dry mixture and mix well. It’s sticky here and takes a while to have it evenly mixed.
  4. Spread into a lined pan and press firmly.
  5. Refrigerate before cutting.
  6. Store in plastic cling wrap individually.

They can last in the fridge for good 2 weeks.
